Ovens with a built-in boiler are generally more expensive but are more suitable for kitchens, which steam potatoes, vegetables and hams etc.

The controls can be either manual or programmable with a memory to store recipes. This facility could be helpful in ensuring continuity so all your staff will be able to re-produce the same high quality menu in your absence.

Some manufacturers also provide the option of an automatic cleaning programme. When you have finished cooking simply select the cleaning cycle required and the oven will clean and rinse itself before switching off.
